Tasting Notes

The 2019 Reserve Spring Mountain Cabernet leads to open, appealing aromas and flavors of rich black plum, boysenberry, and ripe acai berry. Supported by a seamless velvety plush structure and cocoa-dusted tannins, the layers of licorice and warm mocha undertones lift the fruit for a lingering finish.

Winemaking

Fruit from Spring Mountain was hand-harvested in September and brought to the winery in the early morning hours to preserve freshness and fruit quality. Fermentation took place in stainless steel vessels. Fruit was allowed to ferment for up to 15 days with regular pump-overs to extract deep color and rich flavors. The wine was then gently pressed, racked, and aged for 30 months in small French oak barrels (60% new). The toast level on the barrels enhances the structure of the wine and balances the fruit’s inherent ripeness. After aging, barrels were individually tasted and those that best expressed the unique sense of place were selected and bottled.

Vintage

Ample winter rains provided welcome saturation for the soils, followed by a cool Spring which delayed flowering and fruit set. The long, warm summer saw very few extreme heat events, with foggy mornings setting the stage for vibrant and expressive wines. Continued mild temperatures extended the growing season, preserving freshness and finesse in the wines while teasing out beautiful color, silkiness, and balance in the Cabernet Sauvignon.  

Vineyard

Established in 1993, Spring Mountain District is located on the western side of Napa Valley, near the town of St. Helena. The vineyards are planted on a mix of sedimentary and volcanic rock soils, with an elevation that ranges from 400-2,600 feet. As a result, the style here is cooler for the Napa Valley, with wines known for dark fruit flavor and softer tannins.
